Do you have a lot of squash in your garden? Overwhelmed, and don’t know what else to do with it. I found this recipe years ago, and everyone loves it. Great summer night side dish to use up some of that squash.
6 Cups Summer Squash or Zucchini – Sliced (or a mix of both if you like)
1/4 Cup onion chopped
1 Cup Grated Carrots
1 Can Cream of Chicken Soup
1 Cup Sour Cream
1 Box Stove Top Stuffing
1/2 Cup Butter Melted
Boil squash and onions together, 5 minutes, drain well (do not overcook)
In a large bowl, combine squash mix, carrots, soup and sour cream
Combine dry stuffing mix and butter
Spread 1/2 of stuffing mix on bottom of casserole dish
Spread squash mix on top of stuffing
Top with remaining stuffing
Bake in 350 degree oven for 30 minutes. Let stand 5-10 Minutes.
Great with BBQ chicken, ribs, pork or even fish.
